Freeze-dried green pepper
Our green pepper is a freeze-dried unripe pepper. Thanks to the freeze-drying process, the original taste of the green pepper berry is maximally preserved.
Freeze-drying is the most expensive method of preserving pepper. That pays off, because not only is the flavor retained, the freeze-dried berries are easy to hydrate and have a longer shelf life than oven-dried green berries. Because the skin does not wrinkle, the berries are smooth even when they have been fully moistened, as if they have never been dried.
We are often asked why not all freeze-dried berries have the same green color. That's nature. No dyes have been used, so the color varies from pale green with a yellow to brown color and fresh green. If you go for the color, select the greenest specimens yourself.
We already mentioned (re)hydrating the berries. That is not necessary, you can also grind the dry berries, such as for use in delicate dishes, take over sole. But in many cases you will want to use the berry whole in the dish, whether it is a pate, pie, soup or sauce. In those cases, leave the berries in the liquid of your choice for half an hour before use.
You can use plain tap water, brine (some salt dissolved in water), stock, even vermouth or spirits. Pickled berries are delicious with lamb dishes and in curries, berries hydrated in broth on your steak. But it can also be done differently. Think of a spiced crème fraîche: green berries, some chervil leaves and/or finely chopped chives. Delicious with rabbit and palaissons or reibkuchen.
