Red Phú Quốc pepper
This red Phu Quôc (phu quoc) pepper is just like our heavy phu quoc a pepper from the Vietnamese island of Phu Quôc. The red pepper is made with the red, ripe berry and therefore has a fantastic aroma.
Phu Quoc pepper is grown traditionally, without chemical aids, since the 1950s, mainly by women. On the Vietnamese island of Phú Quốc, pepper has been grown traditionally since the beginning of the nineteenth century.
Pepper cultivation was introduced there by the Chinese, but was greatly improved under French management, as happened at the time in Kampot in neighbouring Cambodia.
Phú Quốc is located in Kiên Giang Province, and is the largest island in Vietnam, measuring approximately 590 square kilometres. It is part of an archipelago of 22 islands, and is closer to the coast of Cambodia than to Vietnam. The island has a population of over 100,000. Pepper is one of the sources of income, along with tourism and the famous nuoc mâm (fish sauce).
With government support, the traditional way in which pepper is grown on Phú Quốc is cherished. Since the fifties of the last century, pepper cultivation has become a women's affair, due to political developments and the war(s). And it still is on many plantations.
It is a relatively small pepper in Vietnam, as it only makes up 1% of the country's total pepper crop, which is usually large-scale and mechanized. Unlike the pepper from Bà Rịa-Vũng Tàu, on the east coast, east of Ho Chi Minh City, the Phú Quốc has not yet been considered for geographical indication (GI).
We offer you the white Phú Quốc pepper, Tiêu sọ đỏ Phú Quốc and the red Phú Quốc pepper, called Hạt tiêu chín đỏ Phú Quốc. The red pepper is picked ripe and dried in the sun without further treatment. It then gets a burgundy to reddish brown color.
Usage
The pepper has several subtle aromas of fruit (mango/raspberry) and cocoa, and a slightly sour accent. This makes the pepper suitable for all types of meat (red and white), fruit salads and dishes containing chocolate, even desserts.
Although the pepper also combines well with white fish, squid and octopus, we generally recommend the milder white Phu Quôc for those combinations.
